Days of Odessa Cuisine at Langusta Bukovel

For three days, the restaurant will offer a special menu "Taste of Odessa" - a selection of iconic dishes of Odessa cuisine with an emphasis on Black Sea fish and southern character.
The menu includes: forshmak, Black Sea fish (flounder, red mullet, sargan), Odessa-style herring, Vylkiv ear, Odessa salads and desserts with a marine atmosphere.
"Days of Odessa Cuisine" - an original Odessa menu from chef Yaroslav Gavyuk, who spent his holidays among fishermen in the Odessa region since childhood, worked in a fish restaurant in Marseille, and today specializes in seafood at Langusta.
The project is built on the chef's personal history, Odessa recipes and seafood.
For Yaroslav, this project is about childhood memories in the fishing town of Vylkove, vacations with fishermen, and grandmother Maria's home-cooked meals.
For guests, it's nostalgia for Odessa: the Black Sea, Odessa courtyards, colorful restaurants, and headstrong but honest cuisine.
During February 6-8, a gastronomic performance awaits you:
- professionally selected wines of the Odessa region and Odessa-style cocktails that complement each dish;
- the chef's lively stories about each serving and an author's reinterpretation of classic flavors.

First courses
Vylkove fisherman's ear
Traditional ear made from fish from the Danube River according to the recipe of local fishermen of Vylkove. Served with brine sauce.
Snacks and salads
Odessa forshmak
The legend of Odessa cuisine: Queen matias fillet, butter and pickled apple. Served with an airy bagel.
Herring with potato balls
Lightly salted matias, potato balls, pickled onions, cucumber relish and French mustard.
Black Sea salad with popcorn with mussels
Mixed salad, spinach, green beans and cherry tomatoes in a sweet and sour sauce. Served with potato dips and mussel popcorn.
Donut with Black Sea shrimp
Chef's donut with shrimp, bisque sauce and red caviar.
Fried fish
Grilled flounder with beurre blanc sauce
Flounder steak cooked on tepani, with butter emulsion and beurre blanc sauce based on Odessa wine.
Fried red mullet and sablefish
Golden, crispy, with the aroma of the sea. Fried in corn flour to a perfect crust. Served with tartar sauce.
Desserts
Baklava with cherry mousse
Crispy baklava with cherries, peanuts and mascarpone cheese.

Bessarab apple on fruit vermouth and apple kvass.
Limoncello with celery foam Odessa style
