Serhiy Saman has an inscription on his arm: “Where the magic happens”. For him, it’s not just a phrase, but a calling.
Serhiy Saman is a t.c.pizza brand chef with a history. He is often called the Traveling Chef, because his professional path was shaped both during his travels in Ukraine and abroad. Long-term work experience in Europe has given him a deep understanding of seasonality, product purity and modern technologies.
“I believe that cuisine is like fashion: it changes, develops, forms trends, but always returns to the classics,” says Serhiy.
The concept of the evening: “Land & Sea” as two elements and two sources of inspiration. The chef will introduce familiar seafood and local products in his own vision. With an emphasis on minimalism and details.
The evening’s menu:
- Scallop ceviche with lime, chili oil and cucumber salsa
- Beef tartare with green peas and mushrooms
- Shrimp in spicy romesco sauce
- Dorado with spinach, fried in butter with fermented garlic
- Filet mignon with spicy carrots and spinach
- Buffalo milk panna cotta
